Oh No No No. Do Yourself a Favor and Do NOT Read This Post.

Today, during my weekly Tuesday a routine Target run, a very bad thing happened to me. You won't even believe it when you read this, because its something I had been intentionally avoiding for some time now. And I had been avoiding it quite successfully!

It happened right after I finished glancing through the new workout dvd's, hoping to find some version of a nice Pillates dvd to incorporate into my get-re-fit routine, I happened upon them.

I had heard things about them. Generally good, but that once you take the step you can't really turn back. Because you sort of get addicted. You may know of the type of situation I'm talking about... the kind of thing that starts out innocently and soon enough takes over your ability to exercise self-control and you know that you can't admit it to anyone, especially not your husband because he will be so disappointed in you, but man, without some serious intervention its going to happen anyway...

because you just went ahead put them in your basket.

And then you pushed them down to the bottom so in the event that you run into any of your friends from school who know you are trying to be healthy and happy,  they won't see them and question you or urge you to take them out of your basket.

And you gather up your other items and hurry yourself out of your favorite retail store, just so you can get to the privacy of your car.

And you rip into the plastic and pour a few into your hand.

And then its over.

Because they really are just. that. good.

Not to mention that they were 50% of because Easter already happened.

And then as you chug the rest of the water you have in the car and the watered down tea from lunch, to try and prevent some of the damage you have done to your blood sugar, you pray OUT LOUD that you are thankful to the Lord that it was Easter, but you are so thankful that the rest of the Easter candy is gone, so it will be almost one whole more year before you are faced with such a temptation again.

And you ask that next year you will rest on His ability to help you flee from it since you didn't quite make it this year. (And guys, I'm really not kidding...)

Because these

are just oh too good to resist.

And you also pray a word of thanks that there were only small tubes instead of large bags left and that you were able to resist for six weeks and you thank the Lord that you live in a country where you are able to enjoy such delicate chocolate creations.

And then you get home. Put on the clothes. And know that Jillian is not going to be any easier on you today just because you had a rough time earlier at the store.

Oh, and when I say "you" in this post, I mean me. Dang it.

I'm here. And I'm still writing. (And you can't say I didn't warn you).

Our First Easter Menu. Also Known As Serious Meal-Planning and A Major Step Towards Domestication.

So tomorrow, Easter Sunday 2010, Handsome and I will be in our city alone with each other.  We haven't had a holiday together and sans house guests or away from Hometown since our anniversary which isn't an all-out holiday anyway, and its one of those days where you shouldn't be in your Hometown to visit family and you shouldn't have house guests, so it doesn't count. So basically, in at least the last six months worth of days that are more like national or worldwide holidays, we haven't had one together.

And I'm thoroughly looking forward to it.

We plan on going to an earlier-than-normal church service, after which he will take me out for my favorite omelette (Oh, whats that you say? You didn't know we were going out for breakfast? Well, sweet'ums, we totally are).  And then we will lounge, and he will go for a run, and I will prepare our fancy schmancy holiday dinner which I imagine we will partake in around 3 or 4 p.m.

And its going to be completely fabulous for a few reasons. 1. Because I think Easter is an important holiday, and 2. because I have the opportunity to make a fancy dinner for us, since we won't be in Hometown eating with the families, and because 3. somewhere between the wedding and now I have decided I like cooking.

So in anticipation of the day and the meal (you know how I anticipate a good meal), I have been browsing all of the best cooking websites I know. Cooking Light, Southern Living, The Pioneer Woman Cooks. And watching hours and hours of The Food Network to see what Giada and Cat Cora and Paula Dean have on their Easter Menus.

And instead of doing the simple thing and just making of the "Easy Easter Brunch" menus that they have already created, complete with ready-to-print shopping lists and scheduled timelines, I been thinking about Handsome, and thinking about me, and thinking about what is realistic for us and what kinds of foods we would enjoy.

So for the first time I personalized a holiday menu. (Talk about serious meal planning, people! Can I get a little applause for that?). Just kidding, but I have created something that I think is totally do-able for me. And probably for you too! In the event that you happen upon this post at some point today and have opportunity to run to the grocery store for some last minute supplies.

Our First Easter Dinner Menu

Roasted Asparagus. This is the easiest recipe I have ever looked at. Asparagus. Olive oil. S&P. Into a fairly hot oven for 10 minutes and voila. People think you are brilliant or skilled or something.

Grilled Steak: You see, this is brilliant to include, because Handsome loves to grill. And he's rather good at it. So this makes for one less item that I need to prepare.  I'm really simplifying this way and I know Handsome will think it tastes good because he grilled it. And it will. Because he grilled it. Not to mention that  he can finally use the Williams Sonoma steak grilling rub I bought him  us for Christmas.  And I don't know how to grill so I can't give you any tips here, but maybe someday Handsome will write a how-to post about grilling and you can read it or maybe you are married to Bobby Flay  and he will have thought-out and will prepare an absolutely excellent Easter menu for you.

Roasted Potatoes with Herbed Vinaigrette. Because. This sounds wonderful. And one roasted item is clearly not enough for a decadent meal.

Buttery Rolls (because even if we have potatoes, Handsome can't go a whole fancy meal without a bread item as well and I really don't want him grabbing the plastic bag loaf and bringing over regular sliced bread to my fancy holiday meal for two). Oh, and I'll probably cheat and buy something ready to go at the store, because I am not prepared to spend the day making dough, especially without a bread machine.

Carrot Cake for Dessert. Because it sounds good. And because one PW recipe in a fancy schmancy meal is just not enough. Even if this is the most complicated thing on the menu. Not to mention that I probably owe Handsome a non-chocolate dish. And its spring and its Easter and honestly, who doesn't absolutely LOVE cream cheese frosting. Mmm mmm.

Happy Eating. Happy Planning. Happy Easter.

I'm here. And I'm still writing,

My Top 10: Chocolate. Decadence. Deliciousness. And Absolute Must-Try's.

In honor of Valentines Day, I'm doing a tribute to my first non-familial love. It has been a little while since I have posted a My Top 10, so it was definitely time. And this might have been the absolute easiest one I have written so far. Handsome and I were at dinner one night and I told him I had been thinking about writing this post and he was able to guess 6 of the 6 I had decided would make the list. And together we filled out the other 4 pretty quickly. I am blessed to have a man who pays attention to me and my likes, even the dark chocolately kind.

So without further ado... My top 10 Chocolate Treats of all time.

10. My mom's homemade chocolate glaze for homemade donuts. It has been a while, like absolutely far too long, since we have made homemade chocolate donuts, but nothing beats 'em. Not Dunkin' or Daylight or Krispy Kreme, or even Hometown's favorite super famous local donut shoppe. I'm not sure what her secret is or if its really a secret at all, but the lady has mad skills in this department. Love you Mama!

9. Tim Tam's: These delectable chocolate wafer cookies will practically melt in your mouth. I have only recently made their acquaintence and I'm so thankful I did. Definitely a perfect little grocery store treat. Arnott's makes 'em. And so does Pepperidge Farm.

Arnott's Tim Tam Original

8. Dark Chocolate Covered Yogurt Pretzels from Whole Foods. Umm hello? Salty and sweet really is the perfect combination. And Whole Foods has mastered it with this super simple desert. Too bad they charge a pretty penny for them. These are more like a once-in-a-great while kind of treat which is good since we would have to make the long trek to Whole Foods more frequently if they weren't.

7. Plain Old Chocolate Chip Cookies. Right? Like... duh. Who doesn't love chocolate chip cookies? And I have my favorites, but I'll eat Chips Ahoy or I'll eat homemade. I don't like the super soft, store-bought ones, but if I make them, I definitely like 'em warm out of the oven (or cold from the cookie jar).

6. Yoplait Whips: Chocolate Mouse. For those days when I feel like chocolate but don't want to feel too guilty about it, this is a go-to. It is also just about the only yogurt I'll eat, so anytime I'm on an antibiotic and am supposed to take the pill with yogurt, I stock up on these!

5. Chocolate Covered Strawberries. Yes. Yes. I'm a fan of 'em too. This, like the last, is one of those treats I don't feel entirely guilty about eating because there is fruit in it! But... if I don't limit myself, I can definitely be known to have eaten too many at once. And they can cost a pretty penny too, so I almost prefer to make them at home.

Thats a bit of our groom's cake by the way! It is like a little sneak peak into my wedding!

4. Chocolate Milk. What a Classic! Honestly, this will satisfy my craving so quickly. And it has such a comforting quality to it. Mmmm.

3. Chocolate Covered Graham Crackers (Homemade or Starbucks). Starbucks introduced me to the wonderfulness of the chocolate covered graham. I know not everyone is a big of this combination of flavors, but I think they are fabulous. And once they started to become their own line item in our budget, Handsome suggested we make them at home. And honestly, they are different but just. as. tasty. And so super simple.

2. Chocolate Lasagna. So you might not know about this one. And you might send hate-comments to me after I tell you about it. Why? because it doesn't EXIST anymore. It was the best dessert EVER from the Olive Garden. But they stopped making it. They ripped my heart out when they pulled it from their menu. It was layers of dark chocolate cake in between some sort of vanilla white frosting with chunks of chocolate on top and drizzle of chocolate sauce all over. It was divine. And it was best taken from the resturant, placed into a refridgerator and savored for breakfast. Yes. I eat chocolate cake for breakfast sometimes. And yes. You should send you hate comments to Olive Garden until the bring it back. And then your waist can send hate comments to me. But I won't care because I'll be in paradise with my fork by that point.

Yes, I made the picture extra large because I like to look at it. And yes, I'm salivating while I type. And yes, my heart is totally broken in two.

1. Chocolate Cheesecake. Since my favorite has been removed, a new favorite has had to take its place. And really its quite worthy. I posted a while ago about a delicious chocolate cheesecake my mom and I made when I was visiting Hometown. It is probably the best chocolate cheesecake I have ever tasted and I actually drove home and tore up my hate-letters to Olive Garden after I tried it. And after I ate a little bit at a time for a week solid after making it. So without further ado... I present to you: Hershey's Truffle Brownie Cheesecake (a.k.a. The Best Thing You Will Ever Eat).

INGREDIENTS:

  • BROWNIE LAYER(recipe follows)
  • 3 packages (8 oz. each) cream cheese, softened
  • 3/4 cup sugar
  • 4 eggs
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups (12-oz. pkg.) HERSHEY'S SPECIAL DARK Chocolate Chips, divided
  • 1/2 teaspoon shortening
DIRECTIONS:
1. Heat oven to 350° F. Grease 9-inch springform pan.

2. Prepare BROWNIE LAYER. Bake 25 to 30 minutes or until brownie begins to pull away from side of pan. Meanwhile make cheesecake batter.

3. Beat cream cheese and sugar in large bowl until smooth. Gradually beat in eggs, heavy cream, vanilla and salt, beating until well blended.

4. Set aside 2 tablespoons chocolate chips. Place remaining chips in large microwave-safe bowl. Microwave at MEDIUM (50%) 1-1/2 minutes; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, until chocolate is melted when stirred. Gradually blend melted chocolate into cheesecake batter.

5. Immediately after removing brownie from oven, spoon cheesecake mixture over brownie. Return to oven; continue baking 45 to 50 minutes or until center is almost set. Remove from oven to wire rack. With knife, loosen cake from side of pan. Cool to room temperature. Remove side of pan.

6. Place remaining 2 tablespoons chocolate chips and shortening in small microwave-safe bowl. Microwave at MEDIUM 30 seconds; stir. If necessary, microwave at MEDIUM an additional 10 seconds at a time, stirring after each heating, until chocolate is melted and smooth when stirred. Drizzle over top of cheesecake. Cover; refrigerate several hours until cold. Garnish as desired. Cover and refrigerate leftover cheesecake. 10 to 12 servings.

BROWNIE LAYER: Stir together 6 tablespoons melted butter or margarine, 1-1/4 cups sugar and 1 teaspoon vanilla extract. Add 2 eggs; stirring until blended. Stir in 1 cup plus 2 tablespoons all-purpose flour, 1/3 cup HERSHEY'S Cocoa, 1/2 teaspoon baking powder and 1/2 teaspoon salt; blend well. Spread in prepared pan.

XOXO. I'm still here, and aren't you glad I am writing?

Another Something Delicious. Oreo Truffles.

So last weekend I had two "events" that required me to bring "something." One was a baby shower and I told a hostess I would bring something sweet and the other was Mr. Ruggedly Handsomes Church team v. church team softball duel and bbq. Seeing as I was making some sweetness for the baby shower, I figured I could just make double the fun and knock out both events with one recipe...

I have been wanting a reason to make those awesome cupcake pops Bakerella makes, so I really thought that is what I would do... that is, until I started going through her site! And happened upon these little round balls of fantastical joy for the mouth!

You may have tried them... or maybe you haven't. Either way, you should make them very soon because 1. they are super simple, 2. they don't require very many ingredients, and 3. oh. my. goodness. people will love you and sing your praises if you share. Okay, maybe they won't sing, but these little guys are a great ice-breaker and someone is surely going to want to be your new best friend for sharing.

I attached pictures, even though you can see them in at Bakerella!

Oreo Truffles
For one batch you will need:

1 package oreo cookies (divided… use cookie including the cream center)
1 8oz. package cream cheese (softened)
white chocolate bark

1. Finely crush 7 cookies in a food processor or place them in a ziploc bag and crush into a fine consistency. Reserve for later. (I kept 14 because I doubled the recipe and had way too much cookie crumble left over.)

2. Crush remaining cookies (I started to do this in a ziplock but it wasn't working correctly so I whipped out my handy little food processor and did it that way. This was the part that was most difficult because none of the recipes I read told me whether it would work in a ziplock. Trial and error! :)) Then stir in softened cream cheese. Use the back of a large spoon to help mash the two together.

(It will look smooth after you finish with the food processor. Then you can add in the cream cheese!)

3. Roll the mixture into 1″ balls and place on wax paper covered cookie sheet. (You can kind of see in the photo my cookie dough scooper... I used this to get the correct amount and then rounded them in my hands!)

4. Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry. You can sprinkle the tops with the 7 crushed cookies for decoration.

5. Once dry, refrigerate and enjoy! (You can see I topped some with the crumbled cookies, and others I left alone. I think they looked prettier with the topping, but they all taste very good!).

One batch makes about 36 truffles. (I doubled and ate a bit along the way and came up with 70 and had the perfect amount of dipping chocolate.)

And apparently, you can make them with any flavor of Oreos or Nutter Butters in milk or dark chocolate are supposed to be yummy too!

Mmm. French Vinaigrette.

Have you tried this: Briannas Real French Vinaigrette? Its delish!

And its even more fantastic if you throw in a little avocado to balance out the acidity and some tomatoes for color and some scallions just for kicks, all onto some romaine lettuce. TDF. (That is: Too Die For.) Just kidding about that last part but I'm kinda hooked on it right now. Just threw it on the lettuce for lunch, but I'm going to have to be getting some avocados to mix in for later.

Most simple and delicious salad I know. Of late anyway.

I'm here. And I'm still writing,

P.S. Credit to Handsome's sister-in-law Cam for sharing this salad and dressing.

The End of Church League Softball (for this year).

A few weeks back, Handsome had his last "church" league softball game. To commemorate the occasion, and because I wanted to self-designate as team-mom ever since the "collision," I decided to make cupcakes for the team!

I figured I could easily make something festive! So... I purchased a box cake mix (cheater!) and some white icing and picked up a red icing-gel pen as well. This is the final result:

I think we took more photos but I apparently don't have them on my computer.

And in case you were worried, Handsome's eye injury healed quite nicely. There is a scar underneath his eyebrow, but thankfully it is not very noticeable.

We are a little bummed that summer league is over, but I love fall so much that I think we will get through it.

Deliciousness. In Fruit Form.

So in case you have been worried, my kitchen is fully stocked once again. We have more fruit and vegetables in the refrigerator that you can imagine. We have healthy snacks, unhealthy indulgent snacks, we have our old staples and we have some new things to try.

One of those new things is called an Apple Pear, which is also know by many other names, including Asian Pear. At the grocery store, I found the adorable things on display, all bundled up with an inviting sign. I promptly picked two up, placed them in my bag, and proceeded to tell Mr. Ruggedly Handsome what I found.

Me: "Honey, look what I've got... Apple Pears."

Mr. RH: "Oh good, apples and pears... but I thought we were going to get fruit at the Market" (another grocery store with fabulous produce).

Me: "Oh, no no, these are Apple Pears, not Apples and Pears. And this is the only fruit I got, but I wanted to get them while they are available."

Mr. RH: "Oh Apple Pears is a fruit? What is it like?"

Me: "I guess its like an apple pear combo?"

Mr. RH: "Ok, so what is it?"

Me: "It's an Apple Pear."

At this point, both of us realized we weren't communicating super well, so I pulled them out of my bag and showed him. Then he understood a little more.

I proceeded to try them ASAP once we returned home. And I liked them. Not my absolute-most-favorite-fruit-ever, like-I'm-gonna-cry-if-I-never-get-another-one, but they are good, and I would definitely get some more!

So you say you have never seen an Apple Pear... well, let me show you.

See what a cute little protective blanket it comes in?

Above you can see the little fruit all naked.

And there you can see it beginning to be devoured. Get yourself one! And Mr. if you are reading this, the other one we have is for you so help yourself to it, and I won't report you as a perpetrator on my blog. Promise.

So I'm here. And today I'm eating,

and...

happy half birthday self!

KB: "Self, go get yourself a birthday cake remix ice cream from Cold Stone."

Self: "Well KB, what a wondeful idea. You must convince Handsome, too, though and he is awfully comfy sitting on the couch watching the Golf channel."

KB: "Oh, self, he loves your half birthday and will be thrilled to go. It won't even matter that you already had a sopaipilla with honey."

Self: "You're right. He does love my half birthday. Perhaps I will coax him off of the couch and into the ice cream store. Maybe not for the birthday cake remix, but maybe for splitting a chocolate / cookies 'n' cream milkshake."

KB: "Happy half birthday. Have a wonderful time celebrating."

Self: "Thank you, I love a reason to celebrate!"

Chocolate Truffle Blizzard.

mmm. Doesn't this look tasty? (Ok, ok, this picture specifically may be lacking a little. But there is a better picture on the television commercial and all I had to work with the DQ website instead. Thank you DQ website!)

You already know, either I've told you of or you've experience first hand, my love of chocolate.  I'm wondering if this new blizzard of the month would take it to new levels. Gosh. I don't know. Part of me doesn't want to find out, because let's be real: it is only here for one month and this month is already almost 1/3 over. It just couldn't be healthy to get addicted and then to be deprived of it in such a short time. But part of me really wants to try it. And part of me thinks that it probably looks better on the commercial than it actually tastes and it would be a really good thing to know that...

Anyhow, yesterday, I forgot how much I wanted to try this! And whenMr. Rh asked if he could take me to Baskin Robbins for a milk shake to ease my pain instead, I didn't think twice.

Now don't get me wrong... that milkshake was A-mazing. Baskin Robbins never fails to disappoint! (It was chocolate and cookies 'n' cream mixed together... and it was quite wonderful really.) But dang. I wish I had remembered to try the truffle blizzard, because I'm not sure my infrequent running would allow for the blizzard in addition to the milkshake. Not this week at least. (Especially since I don't have the money or desire to go out and buy all new jeans!)

Maybe you can try it and let me know what you think!

Photobucket

And yes, I apparently post a lot about food when I'm stressed or emotional. I'm not sure when this developed, but "this too shall pass." Especially with the warm weather a'comin'.

Another. Dinner Post. Chicken Georgia

(Update: 6:46 pm. Dinner is not going to be cooked by me tonight. I've just spent the last hour-ish, crying about my returned draft. Needless to say, Prof didn't like it. Not one bit. It apparently needs a lot of the work. So...prayers for me for the next five weeks would be greatly appreciated. And sorry for being a Debbie Downer. Or Katie Cryer I suppose.) But this recipe still looks pretty fab if you ask me. Or Paula. :)

So I know I have been posting a lot about dinner lately (well, two nights in a row), but I'm just gonna go ahead and do it again. Thats three nights of (actually) cooking at home!

I have had a relaxing morning this morning and I saw Paula Deen make this recipe that looks fabulous: Chicken Georgia. And thought its somewhat similar to what I made Monday night, I think I'm gonna make it later today.

It is so simple and it looks really delicious! recipe courtesy of foodnetwork.com

Ingredients

  • 4 tablespoons (1/2 stick) butter
  • 4 skinless boneless chicken breast halves
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons minced shallots
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces grated mozzarella cheese

Directions

Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add chicken and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand 5 minutes or until cheese melts.

Almost-healthy. Indulgence.

Chocolate is one of my best friends. We regularly get together for afternoon snacks and desserts and other fun times. We laugh together, we watch movies together, sometimes we cry together, and we have a particularly sweet relationship for at least several days out of each month. We are true to one another and have been present with one another at both the best and worst of times.

I basically like all forms of it... Actually, no, thats not true. I don't settle for a chocolate candy bar very often, because I just know it won't do the trick. Its like cheating because I'll have to have more, better quality chocolate later to make up for the mistake I made on a whim at the grocery store check-out line. (Not always true if we're thinking about Twix or KitKat, but this is ordinarily the case). As with most candy bars, tI'm not a big fan of plain chocolate chips or Hershey's kisses, but if either are included in baked goods, it is a totally different story.

When I'm in desperate need of a chocolate fix (like a I'm-gonna-flip-out-in-two-point-three-seconds-if-I-don't-have-some-chocolate), my go-to is the Ghirardelli Brownie Mixes. Oh. My. It's the most delicious thing to ever come out of a box. Usually I satisfy the craving by making the batter, and savoring a spoon-full or two. (Yes, I know the health repercussions I could suffer form eating raw eggs in batter, but that doesn't stop me.) This type of situation usually only occurs two or three times a year. And one of those moments might be coming soon...

But I will share with you my newest chocolate obsession. Introducing...

Chocolate pudding, with freshly halved strawberries and a little whip cream! Can I say so fabulous and so easy! And even the slightest bit healthy tasting because of the fruit. Ok, just kidding, but still. This is my newest fresh, delicious spring obsession. And it is fairly "budget-friendly" becuase strawberries are reasonably priced (and you only need a few), pudding is a heck-of-a-deal, and with the small amount of whip cream I use, it's completey affordable too. Just thought I'd share.

Photobucket
*If you haven't tried the brownie mix mentioned above, you must. You don't have to try the raw batter, but make the mix, cook the brownies, and hide them, so you can enjoy days and days of deliciousness that tastes homemade. Actually, tastes better than most homemade brownie recipes I have tried. Just my opinion. The only downside is that it's not exactly budget-friendly, but if you only make them three times a year...

Deliciousness.

Oh. My. Word. This chocolate treat is wonderful. I know it doesn't look delicious in my hands but let me tell you, it is fabulous! I'm not much for storebought treats. I would prefer brownies or cookies made at home to anything made / packaged / purchased at a store. But I saw this sweet treat at Pier 1 and wanted to give it a shot. I was craving chocolate, purchased this and not the curtains I went for, and I enjoyed four sweet pieces on the way home!

It is called "sweet & salty bark" by someone called Organic Confections.

P.S. I had another 3 pieces while I was sitting here!

Grilled Goodness

Because Mr. Rh and I both had the day off in memory of Dr. Martin Luther King, we collaborated after a long walk / jog and decided on grilling for dinner. We used his grilling basket for squash, zucchini, and onions. I made a marinade for the Tilapia, and cooked some cous cous to compliment the fish. I thought the marinade was especially tasty, so I will share it with you after I share of the deliciousness.

This is our dinner table, semi-set. Enough for tonight when the only guests we were entertaining were our little appetites. Forgive the messiness on the left side and the white walls (apartment). You can also see the lamp that we like on the table because it gives enough extra light in our "dining room."  On our plates is the cous cous, the fish is waiting in the middle...

Here is a better shot of the fish.

I think Mr. Rh could eat fish 21 meals out of the week! He used to work on a lake for some time and he was really spoiled on good fish. This was our first married attempt to cook it. I think some species of fish will be feeding our appetites several times a month, now that we are not so intimidated!

If you would like to try this at home:

Marinade Recipe
(a little imprecise, but improvising is what good cooking is about right?) For 5-6, 5-6oz. filets I used:
3ish tablespoons olive oil.
4 tablespoons lemon juice
1/4 teaspoon salt
2 tablespoons lemon pepper seasoning
1/2 teaspoon minced garlic
1/4 ish teaspoon of dill weed

I let them marinate for probably 35-40 minutes and Mr. Rh (my own Bobby Flay) did the grilling. As far as I understand he cooked them on low-medium for about six or so minutes on each side. (Grilling = another reason I feel blessed having a wonderful husband!).
